Ingredients:
• 1/4 cup – Butter
• 1 cup – Brown sugar
• 1 – Egg
• 3/4 cup – flour
• 1 tsp – baking powder
• 1 tsp – vanilla extract (essence)
• 3/4 cup – chopped assorted nuts
• 1 package (6 ounces) – butterscotch flavoured pieces
Method:
- In a medium glass bowl, microwave butter on ‘high’ until it melts. Stir in sugar, egg, flour, baking powder, vanilla extract and nuts.
- Pour the batter into a greased 8 or 9-inch round baking dish.
- Microwave on ‘medium’ for 7- 8.5 minutes. Let it stand covered for 10 minutes.
- Meanwhile, in a small glass bowl, microwave butterscotch for 3-4 minutes or until it melts.
- Add food colouring, stirring until smooth.
- Spread over the brownies. Cut into squares and serve.
