Ingredients:

• Wheat flour – 1 cup
• Rice flour – 1/2 cup
• Maida – 1/2 cup
• Besan (chickpea flour) – 1/2 cup
• Salt – to taste
• Chilli powder – 1/2 tsp
• White sesame seeds – 2 tsp
• Cumin seeds – 2 tsp
• Butter – 3 tbsp
• Oil – to fry

Method:

  1. Combine all flours in a bowl.
  2. Now place this flour mix in a muslin bag/cloth and tie it up with a string.
  3. Steam this for 20 minutes in a steamer.
  4. Now remove the string and beat this with a wooden spoon and powder it.
  5. Sift to remove any lumps.
  6. Powder the lumps and sift again.
  7. Add the remaining ingredients except the oil.
  8. Now knead into a soft dough.
  9. Place some dough in the chakli press and make discs of concentric circles.
  10. Transfer the discs carefully into moderately hot oil and fry until crisp.
  11. Repeat till all the dough is consumed.
  12. Cool and store in a tight container.
