Ingredients:
• Wheat flour – 1 cup
• Rice flour – 1/2 cup
• Maida – 1/2 cup
• Besan (chickpea flour) – 1/2 cup
• Salt – to taste
• Chilli powder – 1/2 tsp
• White sesame seeds – 2 tsp
• Cumin seeds – 2 tsp
• Butter – 3 tbsp
• Oil – to fry
Method:
- Combine all flours in a bowl.
- Now place this flour mix in a muslin bag/cloth and tie it up with a string.
- Steam this for 20 minutes in a steamer.
- Now remove the string and beat this with a wooden spoon and powder it.
- Sift to remove any lumps.
- Powder the lumps and sift again.
- Add the remaining ingredients except the oil.
- Now knead into a soft dough.
- Place some dough in the chakli press and make discs of concentric circles.
- Transfer the discs carefully into moderately hot oil and fry until crisp.
- Repeat till all the dough is consumed.
- Cool and store in a tight container.
