Ingredients:
• 2 lbs – Chicken (breast Meat or leg quarters with bones)
• 2 – medium onions, sliced
• 4 tbsp – curry powder (or 2 tsp – cumin powder, 2 tsp – coriander powder, 1/2 tsp – Turmeric powder, 2 tsp – chilli powder)
• 8 – Curry leaves
• 2 tbsp – Olive oil
• 3 – Cloves
• 1/2 inch – Cinnamon stick
• 1 cup – yogurt
• 1 – Tomato
• 2 tbsp – Lemon juice
• 1/2 cup – coriander leaves, chopped for garnish
Method:
- Cut the chicken into medium-sized pieces, clean, and add salt and the curry powders and marinate for 15 minutes.
- Heat olive oil, fry the sliced onion, cloves and cinnamon stick.
- When onion turns golden, add the chicken, curry leaves and saute for a couple of minutes.
- Then add yogurt, tomato and stir a few turns and add 2 cups of water and lemon juice.
- Cook till chicken is tender, add salt to taste, garnish with coriander leaves.
