Ingredients:
• 4 – hard boiled eggs, shelled and halved
• 2 – medium cooked potatoes, peeled and quartered
• 1 – medium onion, chopped fine
• 3 – medium onions, sliced
• 1 inch – Ginger
• 4 – Green chillies
• 2 – Red Chillies
• 4 tsp – Tomato paste
• 2 tsp – coriander powder
• 3/4 tsp – cumin powder
• 1/4 tsp – Turmeric
• 1 tsp – Garam Masala powder
• Salt, to taste
Method:
- Heat 1 tsp oil/ghee and add sliced onions, ginger, green and red chillies, and saute till onions are pale.
- Cool and blend together to a smooth paste.
- Heat 1 tsp oil, add chopped onion fry till pale, add all the powders fry for a minute.
- Add the ground mixture, tomato paste and salt, mix and let it simmer for 2 minutes.
- Add potatoes and 1/2 cup water and bring to a boil and simmer for 3 mins.
- Add halved eggs, simmer for 1 min. Turn off the heat.
- Garnish with chopped green coriander.
