Ingredients:
• 1 – medium-sized cauliflower, cut into florets
• 1 bunch – Onion leeks, cut into bits
• 4 tbsp – grated cheddar cheese
• 6 – eggs, beaten
• 1 cup – fresh Cream
• 3 tsp – Tomato sauce
• salt to taste
• 1 tsp – pepper powder
• 1 tsp – chilli powder
• 2 tbsp – Butter
Method:
- Cut and soak the cauliflower in salt water for an hour
- Cook the cauliflower in salted boiling water for 10 minutes, then drain.
- Whisk the beaten eggs lightly with salt, pepper, chilli powder, 2 tbsp of grated cheese, fresh cream and tomato sauce.
- Mix together with the cauliflower and onion leeks.
- Transfer to a buttered oven-safe dish and sprinkle the remaining cheese on top.
- Bake in a moderate oven (355 degrees Fahrenheit, Gas mark 4) for 25-30 minutes.
- Serve with buttered toast and chips.
