Ingredients:

• 6 hard-boiled eggs
• 4 onions, minced
• 1/4 tsp – pepper
• 2 tbsp – Tomato puree
• 3 tbsp – Butter
• 1 tbsp – chopped Coriander leaves
• 3 tbsp – breadcrumbs
• Salt to taste

Method:

  1. Grease a baking dish.
  2. Peel and slice the eggs and place lightly on the dish.
  3. Melt the butter and saute the onions gently until golden brown.
  4. Add the tomato puree, pepper and salt.
  5. Simmer for 5 mins.
  6. Remove from the fire and stir in the coriander leaves.
  7. Pour the mixture over the eggs and sprinkle with breadcrumbs.
  8. Bake in a hot oven at 233 degrees C for 20 mins.
  9. Serve immediately.
  10. Makes 4 servings.
