
Ingredients:
• 6 hard-boiled eggs
• 4 onions, minced
• 1/4 tsp – pepper
• 2 tbsp – Tomato puree
• 3 tbsp – Butter
• 1 tbsp – chopped Coriander leaves
• 3 tbsp – breadcrumbs
• Salt to taste
Method:
- Grease a baking dish.
- Peel and slice the eggs and place lightly on the dish.
- Melt the butter and saute the onions gently until golden brown.
- Add the tomato puree, pepper and salt.
- Simmer for 5 mins.
- Remove from the fire and stir in the coriander leaves.
- Pour the mixture over the eggs and sprinkle with breadcrumbs.
- Bake in a hot oven at 233 degrees C for 20 mins.
- Serve immediately.
- Makes 4 servings.
