Ingredients:
• 2 tsp – oil
• 6 – Garlic cloves, finely chopped (or 1 onion, finely sliced)
• 1 bunch – Methi leaves (fenugreek leaves)
• 2 – eggs, beaten well with 1/2 tsp – salt and 1/2 tsp – pepper powder
Method:
- Wash and clean methi leaves and chop finely.
- Heat oil in a pan.
- Add chopped garlic / sliced onion and fry till golden brown in colour on a low to medium heat.
- Add chopped methi leaves and stir well for 2 – 3 minutes.
- Add beaten egg.
- Mix all the ingredients well.
- Adjust salt and pepper powder / sprinkle red chilli powder.
- Cover with a lid and cook on a low to medium heat for 10 minutes or till methi leaves are well combined with egg mixture.
- Open the lid and stir continuously for 2 – 3 minutes.
- Serve hot with rice/rotis.
