Ingredients:
• eggs – 5
• Tomato puree – 1 cup
• Boiled Potatoes – 3
• Mustard paste – 2 tsp
• Onion paste – 2 tbsp
• Ginger Garlic paste – 2 tbsp
• Bay Leaves – 2
• Garam Masala – 1/4 tsp
• Cumin powder – 1/4 tsp
• Chilli powder – 1 tsp
• Turmeric powder – 1/2 tsp
• Oil
• Salt to taste
Method:
- Boil the eggs. Then fry the eggs and potatoes in oil for 1 min with turmeric and salt.
- Heat oil in a kadai and add in the bay leaves to splutter.
- Add mustard paste, tomato puree, ginger – garlic paste, onion paste and fry for 5 minutes, until it turns fragrant.
- Add potatoes, eggs, a little water, garam masala and cumin powder.
- Cover and cook for 5 minutes.
- Serve hot with rice.
