Ingredients:
• 6 – boiled eggs
• 1 – large Onion
• 1 tsp – cumin
• 1.5 tsp – Ginger Garlic paste
• Dried desiccated Coconut powder
• Tamarind – 1 Lemon size
• 1/4 tsp – Garam Masala powder
• 1 tbsp – Red Chilli powder
• Salt to taste
• Curry leaves – a few sprigs
• Mustard Seeds – 1/4 tsp
Method:
- Make a paste of onion and cumin
- Heat oil in a pan, add mustard seeds
- When they splutter, add curry leaves
- Now add the onion cumin paste and fry well until onion mixture is reddish brown in colour
- Add ginger garlic paste, turmeric, red chilli powder, salt and fry for 3 mins
- Add desiccated coconut powder and fry for another 5 mins
- Add the tamarind pulp and eggs, bring to a boil
- Finally add coriander powder and garam masala powder
- Can be served hot with rice or roti
