Ingredients:
• 1/2 cup – Butter
• 1.5 cup – All-purpose flour
• 1.5 cups – Yellow cornmeal
• 1 cup – Powdered Sugar
• 1 tbsp – Vanilla extract
• 1/2 tsp – Baking powder
Method:
- Pre-heat the oven to 350 degree F.
- Line a baking sheet over a baking tray. Keep aside.
- In a large bowl, beat together the butter and the powdered sugar until they turn creamy.
- Meanwhile, mix the flour, baking powder and cornmeal together and keep aside.
- Gradually add the flours and vanilla extract to the butter-sugar mixture and knead them into a soft dough.
- Cover the dough with a lid and keep it in the fridge for an hour.
- Make small balls from the dough and arrange them over a baking sheet leaving enough space between them.
- Bake for 15-20 minutes until they turn golden brown.
