Ingredients:

• 2 cups – All-purpose flour
• 1 cup – Silken Tofu (pureed)
• 1 tsp – Baking powder
• 1 cup – Sugar
• 1/4 tsp – Salt
• 1/4 cup – Milk
• 3/4 cup – Butter (room temperature)
• 1 tsp – Vanilla extract
• 1/2 tsp – Cinnamon powder
• 1/4 cup – Nuts (cashews, Almonds and walnuts)
• 1/4 cup – Dry fruits(raisins, cherries, Apricots and dates)
• A few Almond flakes

Method:

  1. Preheat the oven to 350 degree F. Sift together the flour, baking powder, cinnamon powder and salt in a bowl. Keep aside.
  2. Cream the butter and sugar together until they turn soft.
  3. Add the milk, vanilla and beat it again well.
  4. Add the pureed tofu to the wet ingredients. Mix it with a wooden spoon.
  5. Add the dry ingredients, fruits and nuts to the wet ingredients gradually. The batter will be of semi-solid consistency.
  6. Spread the batter in a prepared loaf pan. Sprinkle the almond flakes over the batter and bake for 30-35 minutes in the middle rack until a skewer inserted comes out clean.
  7. Let the cake cool completely and slice it as per your need.
