Ingredients:

• flour – 2 cups
• Milk – 300 ml
• sodium bicarbonate – 1.5 tsp
• dry Ginger powder – 1 tsp
• Cinnamon powder – 1 tsp
• candied Ginger – 2 tbsp
• soft Jaggery – 1/2 cup
• Sugar – 1/2 cup
• Butter – 1/2 cup
• chopped nuts – 2 tbsp
• salt -1/2 tsp

Method:

  1. Mix together flour, ginger and cinnamon power and salt.
  2. Stir in the candied ginger.
  3. Dissolve jaggery in milk and strain.
  4. Sprinkle 1 tbsp of water over sugar and place on a low flame till it is caramelized.
  5. Add 4 tbsp of hot water to it and make a thick syrup.
  6. Add 4 tbsp of this syrup to the milk and jaggery liquid.
  7. Add butter to it and heat gently till the butter is melted.
  8. Cool and add to the flour mixture.
  9. Lastly, mix soda with 1 tbsp of boiling hot water and add it to the batter.
  10. Pour in a greased pan and sprinkle chopped nuts on top.
  11. Bake in a mode oven (160 C) till done. About 35-40 minutes.
