Ingredients:
• 2 cups – whole Wheat flour or regular atta
• 2 tbsp – Corn flour
• 3/4 cup – Brown sugar
• 1/3 cup – oil
• 1 tsp – baking powder
• 1/2 tsp – baking soda
• 3/4 tsp – Cinnamon powder
• 1 tsp – vanilla extract
• Salt – to taste
• 1.5 cup – Butter milk
• 1 cup – homemade or store-bought granola and few for topping
• 1/4 cup – walnuts, chopped
Method:
- Take wheat flour in a bowl, remove 2 tbsp of flour and add 2 tbsp of corn flour into that.
- Whisk it till they are mixed well.
- Whisk together all of the dry ingredients, including the granola in the same bowl.
- In a bowl, whisk together all the liquid ingredients including brown sugar.
- Pour the liquid ingredients into the dry ingredients, stirring just to combine.
- Do not over mix it.
- Put a big scoop of the batter on to the prepared muffin cups till they are nearly full.
- Sprinkle the top of the muffins with granola or any nuts or dry fruits of your choice.
- In the preheated 375 degrees F oven bake the muffins for 16 to 18 minutes or until a toothpick inserted into the middle muffins comes out clean.
- This yields about 11 to 12 muffins of regular size.
- Remove the muffins from the oven and transfer them to the cooling rack. Serve warm or at room temperature with glass of milk.
