Ingredients:

• Eggplant – 400g
• Onion – 1
• Green chillies – 3
• Coriander leaves – 1/4 bunch
• Salt to taste
• Garam Masala – 1tsp
• Oil – 5tsp

Method:

  1. Cut the eggplant into half-inch cubes and soak in salted water for 10 minutes.
  2. Saute the onion in 2 tsp oil.
  3. Grind it along with coriander leaves and chillies.
  4. Heat oil in a pan and fry the ground paste till oil separates. Add the eggplant, stir and cook till done.
  5. Add 1 tsp garam masala and serve.
