Ingredients:

• Eggplant -1 (medium) cut it into 2 inch slices
• Tomato -1 (medium) cut it into long slices
• Onion -1 (medium) cut it into long slices
• Oil -1 tbsp
• Mustard Seeds -1/2 tsp
• Cumin seeds-1/2 tsp
• Chilli power -1/2 tsp
• Turmeric power – a pinch
• Cumin power-1/2 tsp
• Salt
• Coconut -1 tbsp (optional)

Method:

  1. Pour the oil in a frying pan. Add mustard seeds and cumin seeds.
  2. After spluttering , add onion slices and fry them for a while.
  3. Add tomato, eggplant slices, salt and turmeric powder and fry.
  4. Add chilli powder and coconut (optional).
  5. Finally add cumin powder, and cook till done. Serve hot.
