Ingredients:

• 1 cup – vegetables – (Yams, drumsticks, squash, yellow pumpkins, etc)
• Squash – 1 medium sized
• Turmeric – 1/2 tsp
• Pepper powder – 1 tsp
• Red Chilli Powder- 1 tsp
• Jaggery- 1/2 tsp
• Grated coconut- 4 tbsp (Keep separately)
• Grated coconut- 3/4 cup
• Salt to taste.
• Roast and grind:
• Grated Coconut – 3/4 cup
• Uncooked rice- 1 tsp
• Cumin seeds- 1 tsp
• Garnishing:
• Coconut oil – 4 tsp
• Curry leaves
• Mustard Seeds
• Red Chilli – 1 whole
• Grated Coconut – 4 tbsp

Method:

  1. Cut the vegetables of your choice into cubes.
  2. Add some water, turmeric, pepper powder, red chilli powder, jaggery and salt, and cook.
  3. Roast ingredients and grind them to a coarse consistency.
  4. When the vegetables are cooked, add the powdered ingredients. Allow to cook.
  5. Roast coconut which was kept separately until brown with oil.
  6. Mix and garnish with mustard, curry leaves and red chilli.
