Ingredients:
• 180 g – self-rising flour
• 200 g – Sugar
• 150 g – Butter
• 2 – eggs
• 3 tbsp – cocoa powder
• 1 1/4 tsp – instant coffee powder
• 1 tsp – vanilla essence
• 1 tsp – Vinegar
• 100 ml – hot water
• 1/2 tsp – baking powder
• 1/2 tsp – soda
• 1/4 tsp – salt
Method:
- Dissolve coffee powder in boiling water and add cocoa powder and mix well.
- Sieve the self-rising flour, baking powder, soda and salt.
- Cream butter and sugar until light and fluffy. Lightly beat the eggs.
- Add a little beaten egg to the creamed mixture and beat well after each addition until all the eggs are done.
- Add vinegar and vanilla essence and cream well.
- Add the flour alternately with the coffee-cocoa mixture. Stir well with a spatula.
- Bake at 150 degree C for 45-60 mins.
- Cool completely and ice with chocolate fudge icing.
