Ingredients:

• 180 g – self-rising flour
• 200 g – Sugar
• 150 g – Butter
• 2 – eggs
• 3 tbsp – cocoa powder
• 1 1/4 tsp – instant coffee powder
• 1 tsp – vanilla essence
• 1 tsp – Vinegar
• 100 ml – hot water
• 1/2 tsp – baking powder
• 1/2 tsp – soda
• 1/4 tsp – salt

Method:

  1. Dissolve coffee powder in boiling water and add cocoa powder and mix well.
  2. Sieve the self-rising flour, baking powder, soda and salt.
  3. Cream butter and sugar until light and fluffy. Lightly beat the eggs.
  4. Add a little beaten egg to the creamed mixture and beat well after each addition until all the eggs are done.
  5. Add vinegar and vanilla essence and cream well.
  6. Add the flour alternately with the coffee-cocoa mixture. Stir well with a spatula.
  7. Bake at 150 degree C for 45-60 mins.
  8. Cool completely and ice with chocolate fudge icing.
