Festive Cucumber Peanut Raita

Ingredients:

• 1 cup – Cucumber (grated)
• 2 cups – fresh Curd
• 1/2 cup – Milk
• 1 tsp – cumin powder
• 3/4 tsp – Red Chilli powder
• salt to taste
• 2 tbsp – coarsely ground Peanuts
• 1 tsp – ground Sugar
• 1/2 tsp – each cumin and Mustard Seeds
• 1/2 tbsp – coriander, chopped finely

Method:

  1. Crush the seeds together coarsely with stone or pestle.
  2. Beat curd and milk together till smooth. Add all ingredients.
  3. Mix well and chill for an hour before serving.
