Ingredients:

• 1/2 kg – fish, cubed
• 2 cups – raw mango, diced into cubes
• 1 cup – red onion, chopped
• 1/2 cup – tomato, chopped
• 1/4 cup – Corn kernel
• 1/4 cup – grilled red bell peppers, chopped
• 2 tbsp – Red Chilli pepper, chopped
• 1 tbsp – cumin powder
• 1 tsp – ginger, minced
• Salt and pepper to taste
• 1/4 cup – chopped cilantro, to garnish

Method:

  1. Marinate the fish with salt and pepper and a pinch of turmeric.
  2. Keep aside for 10 minutes.
  3. Shallow fry the fish.
  4. Chop all the vegetables.
  5. Mix together in a bowl with remaining ingredients, let the juices mix together for at least 15 to 20 minutes.
  6. Pour half the salsa into an oven-safe baking dish, place the fish fillet, then pour the rest of the salsa on top.
  7. Bake in a 350 degree F oven for 15 minutes.
  8. Take out of the oven and cool.
  9. Garnish with chopped cilantro.
