Ingredients:

• 1 kg – fish fillet
• 1 – Carrot
• 1 – green pepper
• 2 – sticks Celery
• 3 – Tomatoes
• 3 tbsp – Peanut oil
• 4 tbsp – Vinegar
• 4 tbsp – Sugar
• 1 tsp – fresh ginger, finely chopped
• Salt – to taste
• 1/2 tbsp – Corn flour (optional)

Method:

  1. Skin the fish and cut into bite-sized pieces.
  2. Cut the carrot and pepper into match stick strips.
  3. Cut the celery diagonally.
  4. Drop the vegetables into boiling water and simmer for 5 minutes. Drain.
  5. Skin the tomatoes, remove seeds and chop roughly.
  6. Heat oil in a small pan and fry the fish until cooked for about 5-7 minutes.
  7. Remove the fish and drain.
  8. Pour off excess oil, add vinegar, sugar, ginger, salt, corn flour, all the vegetables and 3/4 cup water.
  9. Bring to the boil, stirring.
  10. Add the fish and simmer for 2 minutes
  11. Serve hot.
