Ingredients:

• 90 gm. Sultanas
• 50 gm. Currants
• 50 gm. candied Lemon and Orange peel
• 125 gm. softened Butter
• 100 gm. Sugar
• 3 eggs
• 1 packet vanilla Sugar
• 250 gm. sifted flour
• 1/2 pkt baking powder (5 gm.)
• 5 tbsp. Milk

Method:

  1. Preheat the oven at 180degreeC.
  2. Grease a bread tin with butter line with greased greaseproof paper.
  3. Chop the candied fruit peel coarsely in the mill in short bursts or use the metal blade in the processor bowl.
  4. Put into a bowl with the currants and sultanas and 1 tbsp – of flour.
  5. Mix together and put aside.
  6. Beat the butter and sugars in the processor for 20 seconds on speed 8 using the plastic blade.
  7. Continue to beat and put in the eggs one at a time through the feeder tube, then the milk and finally the flour with the baking powder (using a tablespoon).
  8. Mix in the fruit in short bursts at first, for 10 seconds on speed 6.
  9. Put the mixture in the tin and bake for 1 hour 15 mins.
  10. Turn out onto a cooking rack.
