Ingredients:
• 90 gm. Sultanas
• 50 gm. Currants
• 50 gm. candied Lemon and Orange peel
• 125 gm. softened Butter
• 100 gm. Sugar
• 3 eggs
• 1 packet vanilla Sugar
• 250 gm. sifted flour
• 1/2 pkt baking powder (5 gm.)
• 5 tbsp. Milk
Method:
- Preheat the oven at 180degreeC.
- Grease a bread tin with butter line with greased greaseproof paper.
- Chop the candied fruit peel coarsely in the mill in short bursts or use the metal blade in the processor bowl.
- Put into a bowl with the currants and sultanas and 1 tbsp – of flour.
- Mix together and put aside.
- Beat the butter and sugars in the processor for 20 seconds on speed 8 using the plastic blade.
- Continue to beat and put in the eggs one at a time through the feeder tube, then the milk and finally the flour with the baking powder (using a tablespoon).
- Mix in the fruit in short bursts at first, for 10 seconds on speed 6.
- Put the mixture in the tin and bake for 1 hour 15 mins.
- Turn out onto a cooking rack.
