Ingredients:
• 2 cups – Cooked Rice
• 2 cups – Spinach (chopped)
• 10 – Garlic Cloves (chopped)
• 1 – Onion (big and chopped)
• 2 – Green chillies
• 1 tsp – Pav bhaji masala
• 1/2 tsp – Garam Masala powder
• 1/2 tsp – Cumin seed powder
• 1/2 cup – Grated Coconut
• 1/2 tsp – Mustard Seeds
• 1/2 tsp – Urad Dal
• Salt
• Oil
Method:
- Heat oil. Let it splutter.
- Add the mustard seeds and urad dal. Immediately add the chopped garlic. Fry for few seconds.
- Now add the chopped onions and slit green chillies. Saute until the onions turns translucent.
- Add the pav bhaji masala, garam masala powder and cumin seed powder along with salt to the onions. Cook for few seconds.
- Add the chopped spinach to the spiced onions. Cook for few minutes until the greens shrinks a bit.
- Add the cooked rice, grated coconut and toss everything gently until the rice gets well mixed.
- Serve with fryums or any sort of spicy side dishes.
