Ingredients:

• 2 cups – Cooked Rice
• 2 cups – Spinach (chopped)
• 10 – Garlic Cloves (chopped)
• 1 – Onion (big and chopped)
• 2 – Green chillies
• 1 tsp – Pav bhaji masala
• 1/2 tsp – Garam Masala powder
• 1/2 tsp – Cumin seed powder
• 1/2 cup – Grated Coconut
• 1/2 tsp – Mustard Seeds
• 1/2 tsp – Urad Dal
• Salt
• Oil

Method:

  1. Heat oil. Let it splutter.
  2. Add the mustard seeds and urad dal. Immediately add the chopped garlic. Fry for few seconds.
  3. Now add the chopped onions and slit green chillies. Saute until the onions turns translucent.
  4. Add the pav bhaji masala, garam masala powder and cumin seed powder along with salt to the onions. Cook for few seconds.
  5. Add the chopped spinach to the spiced onions. Cook for few minutes until the greens shrinks a bit.
  6. Add the cooked rice, grated coconut and toss everything gently until the rice gets well mixed.
  7. Serve with fryums or any sort of spicy side dishes.
