Ingredients:

• 1 cup – Basmati rice, washed and soaked for half hour.
• 1/4 cup – Garlic, crushed and minced
• 1/2 cup – Green peas
• 1 cup – Spinach leaves, very finely chopped
• 1 tsp – Salt, Black Pepper, Cumin seeds each
• 1 tsp – Ghee
• 2 – Bay Leaves
• 2 – Green Chillies, chopped very fine
• 1 cup – Water
• 2 tsp – Kasuri Methi to garnish

Method:

  1. Heat ghee in a pressure cooker, splutter cumin seeds and bay leaves.
  2. Add garlic, green chillies and fry till they turn brown but ensure that they don’t burn.
  3. Add green peas, spices and spinach.
  4. Roast for 2 minutes.
  5. Finally, throw in rice and mix well.
  6. Cook in 1 cup water till 1 whistle and open when pressure eases off.
  7. Garnish it with kasuri methi.
  8. Serve hot with raita or daal.
