Ingredients:

• 1 tin mixed fruit (fruit cocktail, large)
• 2 cup – Milk
• 1 cup – fresh Cream
• 250 g – vanilla sponge cake
• 2 tbsp – vanilla custard powder
• 2 tbsp – Sugar
• 3 tbsp – cashew nuts, roasted
• 2 tbsp – icing Sugar
• Walnuts and Cherries to decorate

Method:

  1. Take 1/2 cup of milk and mix custard powder in it. Boil remaining milk.
  2. Add sugar and custard powder mixture. Cook and stir till the custard is thick.
  3. Let the custard cool. Stir it often during this time to avoid skin forming on top.
  4. Cover with cling-film and keep in refrigerator.
  5. Cut the cake into thin slices.
  6. Drain the fruits from syrup.
