Ingredients:

• 1 – medium size Cauliflower
• 5 to 6 – Potatoes
• 1 – large Tomato
• A handful of Cumin seeds
• 5 to 6 – Green chillies
• 1 – small piece Ginger
• Chilli powder
• Turmeric powder
• Coriander powder
• Coriander leaves for garnish
• Mustard
• Garam Masala (optional)
• Oil as required
• Salt to taste

Method:

  1. Cut cauliflower into small florets and boil in plenty of water, with a little turmeric.
  2. Drain the liquid and keep aside the florets.
  3. In a pan, add oil and heat well.
  4. Add mustard and cumin seeds and allow to splutter.
  5. Add green chillies and ginger, saute well.
  6. Add cauliflower and mix thoroughly.
  7. Add chopped potatoes.
  8. Then add turmeric, chilli, coriander powder and mix well.
  9. Close and leave for 8-10 minutes.
  10. Check occasionally and do not overcook the potato.
  11. Add chopped tomato, leave for a minute.
  12. Add garam masala if needed
  13. Garnish with coriander leaves.
