Ingredients:
• Small Brinjals – 10
• Ginger – 200 g
• Peanuts – 50 g
• Jaggery – one fist
• Coconut – small piece
• Cloves – 4
• chilli powder – 2 tsp
• Onion – 2
• oil – 3 tsp
• Cilantro – 1/2 cup
• water – 1.5 cup
• salt to taste
Method:
- Cut brinjals into 2 slits to form a cross and drop them immediately into salted cold water.
- Now, without oil, fry ginger, coconut, peanuts, cloves and grind them with jaggery and little water.
- Heat oil in a pan and add cut-onions, brinjals and let the ingredients be covered till they become tender.
- Add grounded paste, chilli powder, salt, water, cilantro and simmer on low till the oil is released.
- Serve hot with rice or chapatti.
