Ingredients:

• Small Brinjals – 10
• Ginger – 200 g
• Peanuts – 50 g
• Jaggery – one fist
• Coconut – small piece
• Cloves – 4
• chilli powder – 2 tsp
• Onion – 2
• oil – 3 tsp
• Cilantro – 1/2 cup
• water – 1.5 cup
• salt to taste

Method:

  1. Cut brinjals into 2 slits to form a cross and drop them immediately into salted cold water.
  2. Now, without oil, fry ginger, coconut, peanuts, cloves and grind them with jaggery and little water.
  3. Heat oil in a pan and add cut-onions, brinjals and let the ingredients be covered till they become tender.
  4. Add grounded paste, chilli powder, salt, water, cilantro and simmer on low till the oil is released.
  5. Serve hot with rice or chapatti.
