Ingredients:

• 1 kg -meat (chicken/beef/mutton/pork)
• 2 – medium Potatoes
• For Seasoning:
• 3 tbsp – Ghee
• a few – Curry leaves
• 1 – small Onion finely sliced
• Salt to taste
• For Vindaloo Masala:
• 1/2 tsp – peppercorns
• 3 tsp – cumin
• 12 – small dry Kashmir chillies
• 1/2 tsp – Turmeric
• 2 – Cardamoms
• 10 – Cloves Garlic
• 2 tbsp – Vinegar

Method:

  1. Grind the masala ingredients to a smooth paste adding vinegar.
  2. Heat oil and fry onion till brown, add curry leaves and stir.
  3. Fry the vindaloo masala, stir well and now add meat and salt to taste and cook covered.
  4. Toss gently at intervals to cook meat evenly.
  5. Boil the potatoes, peel and cut into fours.
  6. Add them to the meat.
  7. Simmer till meat is cooked.
  8. Serve.
