Ingredients:
• ½ kg – grated sour green Mango
• ½ kg – Sugar
• ¼ cup – onion, finely chopped
• 3 to 4 pieces – Cinnamon
• 1.5 tsp – ginger, minced
• 1.5 tsp – garlic, minced
• 75 ml – Vinegar
• 5 tsp – salt
• 2 tsp – chili powder
• 1 tsp – Cardamom pods
Method:
- Add a little water to mango and cook till soft.
- Add sugar and salt and keep aside till the sugar is dissolved.
- Tie all the ingredients from cardamom to onion in a piece of muslin and add to mango.
- Add chili powder and cook till the mixture is quite thick.
- Remove the spice bag and squeeze in all the juice.
- Add vinegar and cook till the relish has the consistency of jam.
- Pour in sterilized bottles, cool and seal.
- Lasts for a couple of months and longer in the refrigerator.
