Ingredients:
• 3 – Tomatoes
• 2 – Capsicums
• 2 – Onions
• 200 g – Paneer
• 1 – Green chilli, finely chopped
• 1 – Garlic crushed
• 1 tsp- Olive oil
• 1 tsp- Assorted dried herbs, crushed (basil, thyme, rosemary, mint, etc)
• 1 tsp – Lemon juice
• 1 tsp- Sugar, ground
• 1/2 tsp- Soya sauce
• Salt to taste
• 1/2 cup – Grated cheese.
Method:
- Make a vertical cut in each tomato.
- Scoop out the pulp in a bowl.
- Mash it well and keep aside.
- Reserve the outer shell.
- Now put the olive oil, lemon juice, soya sauce, sugar, salt in a bottle with a lid. Add the herbs, garlic, chilli, tomato seeds and pulp, 2 tbsp water and shake it well.
- Keep the marinade aside till required.
- Now chop the capsicum, tomato shells, onions and paneer into even sized chunks.
- Put each in a separate bowl, add one fourth of the prepared marinade.
- Gently coat pieces with the marinade by tossing .
- Allow to marinate for about 30 minutes.
- Grill each of the marinated ingredients for 2-3 minutes in a hot grill.
- Then toss them together in a large bowl and sprinkle grated cheese.
- Grill again for 2-3 minutes until the cheese melts.
- Serve hot.
