Ingredients:

• 3 – Tomatoes
• 2 – Capsicums
• 2 – Onions
• 200 g – Paneer
• 1 – Green chilli, finely chopped
• 1 – Garlic crushed
• 1 tsp- Olive oil
• 1 tsp- Assorted dried herbs, crushed (basil, thyme, rosemary, mint, etc)
• 1 tsp – Lemon juice
• 1 tsp- Sugar, ground
• 1/2 tsp- Soya sauce
• Salt to taste
• 1/2 cup – Grated cheese.

Method:

  1. Make a vertical cut in each tomato.
  2. Scoop out the pulp in a bowl.
  3. Mash it well and keep aside.
  4. Reserve the outer shell.
  5. Now put the olive oil, lemon juice, soya sauce, sugar, salt in a bottle with a lid. Add the herbs, garlic, chilli, tomato seeds and pulp, 2 tbsp water and shake it well.
  6. Keep the marinade aside till required.
  7. Now chop the capsicum, tomato shells, onions and paneer into even sized chunks.
  8. Put each in a separate bowl, add one fourth of the prepared marinade.
  9. Gently coat pieces with the marinade by tossing .
  10. Allow to marinate for about 30 minutes.
  11. Grill each of the marinated ingredients for 2-3 minutes in a hot grill.
  12. Then toss them together in a large bowl and sprinkle grated cheese.
  13. Grill again for 2-3 minutes until the cheese melts.
  14. Serve hot.
