Kadhi is popular and delightful recipe from Gujarati Cuisine. Gujarati Kadhi is made from besan, spices and yogurt. There are different variations in Gujarati style Kadhi. Here I am sharing a Kadhi recipe which has sweet taste. Kadhi is eaten with Khichadi, vegetable pulao or with steamed Rice. It is very quick and easy to make. You can also enjoy this Kadhi with your everyday meal.

Ingredients:

To Make Kadhi better
– 1 cup yogurt
– 2 tablespoons gram flour (besan)
– 1/4 teaspoon turmeric powder
– Salt to taste
– 2 cups water
– 1 teaspoon grated ginger
– 2 green chillies, slit
To Make Tadka
– 1 tablespoon oil
– 1 tablespoon ghee
– 1 inch long cinnamon stick
– 3-4 cloves
– 1 bay leaf
– 1/2 teaspoon mustard seeds
– 1/2 teaspoon cumin seeds
– 1/4 teaspoon fenugreek seeds
– 1 dried red chillies
– 6-7 curry leaves
– Fresh coriander leaves, for garnish

How To Cook?

To Make Kadhi Better
1. In a large bowl, beat yogurt and gram flour and with the help of blender.
2. Now, add water, turmeric powder, green chilli, grated ginger and salt to it and blend it again. Make sure that there are no lumps.
3. Transfer this better in a deep pan and turn on the flame then put the pan on MEDIUM flame.
To Make Tadka
1. In another pan, heat oil and ghee and then add cinnamon stick and cloves and saute it for a minutes then add mustard seeds, cumin seeds and fenugreek seeds when they start spluttering add red chilli and curry leaves. Switch of the flame.
2. Pour this tadka over Kadhi and cook it for 10-15 minutes.
3. Garnish this Kadhi with fresh coriander leaves and serve this hot Kadhi with khichdi or steamed rice.
