Ingredients:
• 1 pound – raw Prawns
• 2 tbsp – Lemon juice
• 1/2 tbsp – Jakarta sambal hot
• 1/2 tbsp – spicy chilli sauce
• 3 Cloves garlic, crushed
• 1 tbsp – vegetable oil
• 2 strips – thinly peeled Lemon rind
• 1 tomato, finely chopped
• 1 tsp – salt
Method:
- Shell and devein prawns.
- Heat oil in frying pan.
- Fry onion and garlic until onion is soft.
- Add Jakarta sambal, spicy chilli sauce and lemon rind.
- Then add prawns and fry, stirring constantly until prawns change colour.
- Add tomato and lemon juice and simmer on low heat until gravy is thick and oil starts to separate.
- Remove lemon rind.
- Stir in salt and serve immediately.
