Ingredients:

• 1 cup – long grain Rice
• 1/4 cup – shredded Cabbage
• 1/4 cup – partially boiled Cauliflower
• Handful – chopped, Spring onions white
• 1/2 cup – thinly sliced pepper (green, yellow, red any)
• 1 – medium sized Carrot shredded
• 1 tbsp – dark soya sauce
• 1 tbsp – sweet Red Chilli sauce
• 1 tsp – Vinegar
• 3 – Garlic cloves, finely chopped
• 1/8 tsp – pepper powder
• 1.5 tbsp – Olive oil
• A few chopped – Spring onions greens (for garnish)

Method:

  1. Cook the rice and keep aside.
  2. Heat oil in a wide and deep wok, add garlic and saute till you get an aroma
  3. Add white spring onions, cauliflower, carrot and capsicum, salt. Toss well and fry for few mins, they should not be fried too much as they lose the crunch
  4. Add the rice, green onions, cabbage, sauces, vinegar, pepper powder
  5. Toss for 2 min. garnish with green onions.
