Ingredients:
• 250 gms. Raisins
• 250 gms. Sultanas
• 250 gms. Brown sugar
• 150 ml. strong black tea
• 250 gms. Plain flour
• 1 tsp. baking powder
• 1 tsp. mixed spice
Method:
- Put the fruit and sugar in a bowl and pour the tea over.
- Cover with cling wrap and leave overnight.
- Sift flour and baking powder and spices together.
- Mix in the eggs and flour, alternately and stir well.
- Pour mixture into a prepared medium sized loaf tin and bake in preheated oven at 160 degrees C for 1 ½ hours.
