Ingredients:

• 3 – potatoes, cooked
• 2 – carrots, grated
• 1 cup – green peas, frozen
• 1/2 cup – cabbage, shredded
• 1/4 cup – capsicum, chopped
• 2 – onions, chopped
• 2 tbsp – dry Fenugreek leaves
• 1 tsp – Garam Masala powder
• 1/2 tsp – Red Chilli powder
• 1 tsp – coriander powder
• 1 tsp – ajwain seeds
• Salt
• Oil
• A few – Curry leaves

Method:

  1. Heat enough oil, fry the ajwain seeds until they turn brown
  2. Add the chopped onions, curry leaves, and saute until the onions turn translucent
  3. Now add the grated carrots, frozen green peas, saute everything for a few mins with salt.
  4. Finally add the cooked and mashed potatoes, shredded cabbage, chopped capsicum, saute along with garam masala, red chilli powder and coriander powder, simmer till done
