Ingredients:
• 3/4 kg. lady’s fingers
• 3 tbsp – Mango powder (amchur)
• 3 tbsp – Cumin seed powder
• 1 tsp – chilli powder
• 1/2 tsp – Turmeric powder
• 3 tbsp – fresh coconut, grated
• 1/2 cup coriander leaves, chopped
• 1 tsp – caramelized Sugar
• 4 tbsp – oil
• Salt to taste
Method:
- Wipe the lady’s fingers clean.
- Remove stems and tips and slit lengthwise.
- Mix all powdered spices, sugar, coconut, coriander leaves and salt.
- Stuff the lady’s fingers with this mixture.
- Heat oil in a non-stick pan and arrange the stuffed lady’s fingers in it.
- Do not cover.
- Cook on a low flame, turning occasionally without burning or breaking the vegetable.
- Serve with parathas.
