Ingredients:

• 2 cup – boiled / precooked Rice
• 1 cup – cucumber, chopped with skin
• 1 cup – beaten yogurt/ Curd
• salt to taste
• 1/4 cup – coriander stems and leaves, chopped
• For tempering:
• 1/2 tsp – Cumin seeds
• 1/2 tsp – split bengal gram( Chana dal)
• 1 tbsp – clarified Butter
• 1/2 tsp – Red Chilli powder
• 1 – green chilli, slit

Method:

  1. Take beaten yogurt, boiled rice, chopped cucumber and salt in a bowl.
  2. Toss well and set it aside.
  3. Heat clarified butter in a pan, add bengal gram, cumin seeds, curry leaves, green chilli and stir. Add red chilli powder.
  4. Cook for a minute on low heat.
  5. Add this tempering to the rice yogurt mixture.
  6. Toss it well with a spoon .
  7. Serve chilled.
  8. You may serve it as salad.
