Ingredients:

• 1 – (medium) Brinjal
• 1 – (whipped) Egg
• 1 – (large) Onion
• 4-5 pods – Garlic (crushed)
• Turmeric powder
• Salt
• Mustard oil

Method:

  1. Grill the brinjal on an open fire, remove the burnt skin and cut to small pieces with a knife.
  2. Heat mustard oil in a pan and add onion, fry till golden brown.
  3. Add salt and a little turmeric powder, mix.
  4. Now add garlic, stir.
  5. Add brinjal, mix well and cook on low flame for 4-5 minutes.
  6. Add the whipped egg, mix well and switch off the heat immediately.
