Ingredients:
• 1/2 cup – green gram dal
• 1 pinch – Turmeric powder
• 1 big – Potato
• 2 – carrots, chopped
• 1/2 cup – string beans, chopped
• 1 big – tomato, chopped
• 1 – onion, sliced
• 2 – green chillies, cut into big pieces
• 1 inch – fresh ginger, finely chopped
• Curry leaves, a few
• 1 tbsp – Cashew nuts
• Chopped fresh coriander leaves, for garnishing
• 1/4 tsp – Cumin seeds
• 2 tbsp – cooking oil
• 1.5 tsp – salt
• Ingredients for grinding:
• 2 tbsp – fresh grated Coconut
• 1/2 tsp – Cumin seeds
• 1 tbsp – Cashew nuts
• 3 – Cardamoms
• 1 inch stick – Cinnamon
• 6 – Cloves
• 1/2 tsp – sambar powder
Method:
- Pressure cook green gram dal and turmeric powder.
- Pressure cook potato along with the dal in a different stackable container.
- Cook chopped carrots and chopped beans separately to avoid them becoming mushy.
- Grind all the ingredients for grinding with a little water, into a slightly coarse paste.
- Heat oil in a pan and add cumin seeds.
- Add sliced onions, green chillies, ginger and curry leaves.
- Saute till onions become transparent.
- Stir in the ground paste and cook for 2 minutes.
- Add chopped tomatoes and cooked carrots and beans.
- Add peeled and crumbled potatoes and stir well.
- Add the pressure cooked mushy dal and salt.
- Simmer for a few more minutes till you get a pleasant aroma.
- Garnish with roasted cashew nuts and fresh coriander leaves.
- Serve with idlis or dosas.
