Ingredients:
• 3 eggs
• 6 tbsp. Sugar
• 1 tsp. powdered gelatin
• 4 tbsp. Lemon juice
• 1 tsp. grated Lemon rind
Method:
- Separate the eggs and place the yolks in one bowl, the whites in another.
- Beat yolks with the sugar until very pale yellow and fluffy.
- Dissolve the gelatin in 1 tbsp. of hot water and mix with the lemon juice.
- Add to the creamed yolks with the lemon rind and mix well.
- Beat whites until very stiff and fold gently into the yolk mixture. Spoon the mousse into a glass bowl and refrigerate for at least 8 hours.
- Once the mouse is set, decorate with slices of seasonal fruits.
