Ingredients:
• 170 gms – Refined flour
• 1/2 tsp – Baking powder
• 3 – eggs
• 50 ml – Milk for mixing
• 1/2 tsp – Grated Lemon rind
• 115 gms – Sugar
• 115 gms – Butter
• 2 drops Lemon essence
• Citron peel (optional)
Method:
- Sieve dry ingredients and add grated lemon
- Cream butter and sugar.
- Beat in eggs a little at a time.
- Add sieved dry ingredients to creamed mixture alternately with a little milk and essence.
- Bake for 1 – 1.5 hours at 175 degrees C on gas mark 4.
- To Decorate: Place a slice of peel on top before baking.
