Ingredients:

• 170 g – flour
• 120 g – Sugar
• 120 g – Butter or margarine
• 1/2 tsp – baking soda
• 3 – eggs
• 1 tsp – Lime juice
• 1 tsp – Lemon rind
• 1/2 tsp – Lemon essence
• few drops – vanilla essence
• 15 g – candied Orange peel
• Milk to mix
• 1 pinch – salt

Method:

  1. Sieve the flour with the baking powder.
  2. Cream the butter and sugar till light and fluffy.
  3. In a steel vessel beat the eggs with vanilla essence.
  4. Add to the sugar and butter mixture little by little while mixing gently.
  5. Take care that the mixture does not curdle.
  6. Fold in the flour lightly.
  7. Add lemon juice, lemon rind and lemon essence.
  8. Add enough milk to the mixture till dropping consistency.
  9. Pour the mixture in a greased baking tin.
  10. Bake in an oven at 375 degrees Fahrenheit/150 degrees centigrade for about 45 minutes.
  11. Decorate with strips of candied orange peel.
