• 60 g -caster Sugar
• 60 g- plain flour
• 60 g- melted Butter
• 2 -medium eggs
• 1- lemon, zest
• 1/2 tsp -baking powder
• Icing Sugar for dusting
- Preheat oven at 220 C. Sift flour and baking powder.
- Grease muffin tins.
- Whisk zest, eggs and sugar together.
- Pour butter around the bowl’s edge. Divide equally between tins.
- Bake for about 12 – 15 minutes.
- On cooling, dust with icing sugar.
- Fold in flour and baking powder.
