Ingredients:

• 60 g -caster Sugar
• 60 g- plain flour
• 60 g- melted Butter
• 2 -medium eggs
• 1- lemon, zest
• 1/2 tsp -baking powder
• Icing Sugar for dusting

Method:

  1. Preheat oven at 220 C. Sift flour and baking powder.
  2. Grease muffin tins.
  3. Whisk zest, eggs and sugar together.
  4. Pour butter around the bowl’s edge. Divide equally between tins.
  5. Bake for about 12 – 15 minutes.
  6. On cooling, dust with icing sugar.
  7. Fold in flour and baking powder.
