Ingredients:

• For the dough:
• 150 g – Wheat flour (atta)
• 50 g – Maida
• 1/4 tsp – salt
• 1 tbsp – oil
• Ghee for frying the parathas
• For the filling:
• 200 g – fresh Cottage cheese (mashed)
• 1 – small Onion (chopped finely)
• 1 – Green chilli (chopped finely)
• 1/4 tsp – Ginger (chopped finely)
• 1/4 tsp – pepper powder
• 1 tbsp – Coriander leaves (chopped)

Method:

  1. Knead the ingredients for the dough using water.
  2. The dough should be smooth and pliable. Keep it for 15-20 minutes.
  3. Knead again and divide into 6 balls. Flatten and roll out into discs.
  4. Combine the ingredients for the filling and divide into three.
  5. Place half the filling on one disc. Cover with another disc and roll out again.
  6. Roll out other parathas with the remaining filling in a similar manner.
  7. Heat a griddle and fry the parathas, one at a time, with the help of ghee or oil.
  8. Serve hot with butter, pickle or curd.
