Ingredients:

• 1/2 cup – whole Wheat flour
• 1/2 cup – all-purpose flour
• 2 tbsp – brown sugar, firmly packed
• 1/2 tsp – baking soda
• 1/8 tsp – salt
• 1/2 cup – ripe mashed Mango
• 1 tbsp plus 1 1/2 tbsp – vegetable oil
• 1 egg, beaten
• 1 tbsp – skim Milk
• 1/4 tsp – Coconut extract
• 1/4 tsp – Almond extract

Method:

  1. Combine first 5 ingredients in a large bowl; make a well in center of mix.
  2. Combine mango, oil, egg, milk and flavorings.
  3. Add liquid mix to dry ingredients, stirring just until the dry ingredients are moistened.
  4. Spoon batter into greased and floured miniature muffin pans, or pans which have been lined with miniature muffin cups.
  5. Fill the cups only to 3/4 of their capacity.
  6. Bake at 350 c for 10 to 12 minutes or until golden brown.
  7. Remove from pans and let cool slightly on wire rack.
