Ingredients:

• Broccoli florets – 1 cup
• Cucumber (peeled and sliced) – 1
• Onion, thinly sliced – 1
• Green bell pepper thinly sliced – 1
• Red bell pepper, thinly sliced – 1
• Carrots, peeled, thinly sliced – 2
• Parmesan cheese, grated – 3/4 cup
• Minced Parsley – 1 tbsp
• Dried Oregano – 1 tsp
• Dried Basil – 1 tsp
• Cherry tomatoes, halved – 3-4
• Salt and pepper

Method:

  1. Combine all ingredients, except tomatoes, in large bowl.
  2. Cover and refrigerate overnight, stirring occasionally.
  3. Add tomatoes, season with salt and pepper and toss.
