Ingredients:
• 250 g – Flour/maida
• 250 g – Butter
• 200 g – Sugar
• 3 – eggs beaten
• 1/2 tsp – Baking powder
• 1 tsp – Orange essence
• 2 tbsp – Milk
• 3 tbsp – Marmalade
• 1/4 tsp – Salt.
Method:
- Sift the flour, salt and baking powder together.
- Now cream the butter and sugar together in a bowl. Add the beaten eggs, orange essence and mix well.
- Fold in the flour bit by bit.
- Add a little milk if the mixture is too thick.
- Now pour it onto a greased and floured cake tin.
- Bake for 30 to 35 mins or until the cake browns on the top.
- Now take a sheet of thick brown paper and sprinkle a little water on it.
- While the cake is still hot, turn it out onto the dampened paper.
- Cut it horizontally in the centre and spread the warm marmalade on it .
- Now fold it tightly with the paper in a roll.
- Chill in the refrigerator for 2 hours.
- Cut into round slices and serve.
