Ingredients:

• 3 cups Rice
• 1/4 kg – Vegetables [Carrot, Brinjal, Cabbage, Cauliflower, any or all]
• 1 tsp – Mustard Seeds
• 2 – Green chillies
• 1 tsp – Garam Masala
• 50 gm – Cashews (optional)
• 1 – Small bowl Coriander leaves
• 1/2 cup – Grated Coconut
• 1 tsp – Turmeric powder
• 1 tsp – Red Chilli powder
• Salt to taste
• little Asafoetida (Hing) powder

Method:

  1. First wash the rice and keep it aside.
  2. Cut the vegetables lengthwise.
  3. Take oil in a pan and splutter mustard seeds, green chillies, garam masala, turmeric powder, hing and red chilli powder.
  4. Then put the vegetable pieces in it and fry it till it gets little brown.
  5. Add the washed rice and fry for a while.
  6. Add double amount of water to it [ 3 cups rice – 6 cups water].
  7. Allow the rice to get boiled.
  8. When the rice gets cooked put grated coconut and coriander leaves and mix it.
  9. Serve hot.
