Ingredients:
• 2 cups – cooked Rice
• 2 -3 – eggs, beaten well
• 1 – onion, chopped fine
• 1 tomato, chopped fine
• Cooked peas
• 2 – green chillies, chopped fine
• Ginger and Garlic paste
• 2 tsps – chopped Cilantro
• Jeera powder – as per need
• Coriander powder – as per need
• Chilli powder – as per need
• A pinch of Garam Masala
• 2-3 Cloves
• 2-3 Cardamom pods
• 1 inch piece – Cinnamon
• 1 Bay Leaf
• 1 tsp – Ghee
• Oil
• Salt to taste
• Optional Ingredients:
• 1/2 – capsicum, cut in thin slices
• Cooked Prawns
• Cooked Cauliflower florets
Method:
- Heat oil in a skillet and add the cloves, cardamom, cinnamon, and bay leaf and fry a while.
- Add the onions and a little sugar (so the onions brown well) and saute till the onions are golden brown
- Add the ginger and garlic paste and saute for 2-3 minutes.
- Add salt and the masala powders and stir.
- Add the chopped chillies and tomato, and saute till you can see the oil separate. (You can add the optional ingredients now, if using.)
- Add the beaten egg along with the cilantro into this mixture and keep stirring continuously till the egg scrambles and the mixture turns a little dry.
- Add the rice gradually and mix all the ingredients well.
- Turn off the heat. Mix in the ghee. Sprinkle the garam masala and serve hot.
