Ingredients:

• 1 tbsp – garlic, chopped
• 4 tbsp – oil
• 200 gms – fish, thinly sliced
• 200 gms – chicken, thinly sliced
• 4 – eggs
• 2 cups – cooked rice, cooled
• 1 cup – diced Pineapple
• 2 tsp – Sugar
• 3 tbsp – fish sauce (nam pla)
• 1 – green onion, cut finely
• Garnish Ingredients:
• Fresh pickles
• 2 – cucumbers, sliced
• 1 tsp – chilli peppers, or to taste
• 1 tbsp – cilantro/coriander, chopped
• 2 tsp – ground white peppers
• 1 tbsp – Tomato and chilli sauce

Method:

  1. Fry garlic in oil until it turns golden brown over medium heat. Increase heat to medium high, add chicken and fish.
  2. Cook until they are almost done, add eggs and scramble.
  3. Cook halfway through, add rice and pineapple, and mix quickly.
  4. Sprinkle sugar, white peppers, fish sauce, green onions and mix well.
  5. Cook for about 2 mins more, stirring constantly.
  6. Then remove from heat.
  7. Serve hot with garnish ingredients sprinkled on top.
