Ingredients:

• 10 large Cabbage leaves
• 1 chicken/mutton stock
• a bunch Spring onion (green part)
• 2 tbsp – chopped Spring onion (white part)
• 1 tsp – chopped Garlic
• 2 tbsp – fish sauce
• 200 g – lean minced lamb
• 1 tbsp – oil
• 1/2 tsp – Green chilli paste
• 1 tsp – soya sauce
• salt and pepper to taste

Method:

  1. Blanch the cabbage leaves and spring onion stems in boiling stock for 10-15 seconds.
  2. Combine the rest of the ingredients for the filling and season well.
  3. Place the filling on top of the cabbage leaves and make a parcel.
  4. Secure the parcel with spring onion stocks.
  5. Add the cabbage parcels into the boiling stock and cook for 20 minutes.
  6. Garnish with chopped coriander and spring onions.
  7. Serve hot along with steamed rice.
